Zucchini Bread
Zutaten:
2 loaves, 3 eggs, 1 cup oil, 2 c sugar, 2 c grated zucchini, 1 tbs vanilla,
3 c flour, 1 tsp salt, 1/4 tsp baking powder, 1 tsp soda, 3 tsp cinnamon,
1 c walnuts.
preheat oven to 325 degrees.
beat eggs til light and fluffy; add oil, sugar, zucchini and vanilla; sift in sep bowl: salt, flour, soda,powder and cinnamon; mix together; add nuts; bake in 325 degrees greased & floured pans; 1 hour, or until done.

Well, I know I'm lucky to be doing what I'm doing, so I try to be grateful of everything that's come my way. Everything! I know there are a lot of people who are just as capable as me, and deserve to be in my shoes, so my motto is, "I may not be worthy, but I belong here!" Because I've worked hard too.

I really hope people start taking the environment seriously and wake up to what we're doing to it, and how it will affect the future. We need to take care of the world and each other!
